Sekiya Brewery producer of Black Dot 2015 was established in 1865 based in Kitashitara-gun is located in a mountain valley pass in the Japanese Alps between Nagoya and Nagano. For hundred of years the town was a waypoint and resting place for travelers between the two cities. Sekiya Brewery was established because of the clean water from the mountains and the thirsty travelers crossing the mountains. Gunma Izumi Yamahai Junmai "Famous Fountain"
Four Hot Words: Elegant-Yamahai, Smooth, Round, & 3-temp-drinkable. Some Yamahais are too "Yamahai(y)" and drink like a wet dog! And some Yamahais are almost too fancy and drink like a Ginjo or even a Daiginjo. This brew from Gunma Prefecture (Not a lot of Gunma sakes available in the US) is full, rich and fat. BUT it drinks very smooth, soft, and round, which means you can have more than a glass or two, because it doesn't drink like the wet dog! Currently my empty bottle at home has a flower in it, because it's an awesome vase! They name this sake "Thousand Waves" because they only release a 1,000 of these cool ceramic bottles each year. This Yamahai has the nose and the flavor of a robust full-bodied brew, but it drinks incredibly smooth and balanced for all of the action. A throw back bottle for a throw back form of making sake using the Yamahai technique, which is a method of allowing more naturally occurring lactic acid to be a part of the brewing process. If you have not tried a "Yamahai" this is a great starting point because it has the elevated acidity and the gamey nature of a true yamahai, but it does drink far more elegantly and maybe that's why they put it in the elegant bottle. This is a very elegant, clean, and flavorful sake that has semi-chewy layers of flavors that bounce between melon, peach and blueberry- floating on a mineral water quality. It's a mouthful of flavor with a soft and round finish that ends quickly for so many faces of fruit and fun. In a word this sake is a very good example of a Ginjo in the raw form. Kimurashiki Kiseki No Osake Junmai Ginjo "Miracle Sake"
This brew is a story worth sharing. There was once an apple orchard in Japan that grew okay apples. Not great and not special. As hard as they tried they could not up their game. Then one day they invited a legendary farmer/cultivator named Kimura who developed his own growing technique called the Kimura Natural Cultivation Method. And voila! From that day forth those apple farmers have grown legendary apples that are famous throughout Japan and are called "Miracle Apples." Fast forward to a sake brewery in Okayama Prefecture that was having a similarly difficult time growing good rice for their sake. They invited Kimura-san to work his magic in the rice game, and voila he started using a rice varietal called Asahi, which produced this sake called you guessed it "Miracle Sake."
