Opened in 1995 with 3 employees, the Sunshine Café essentially became a sequel to the original Casey’s Café’s of North Palm Springs and Morongo Valley and the Royal Fox Inn Restaurant in Desert Hot Springs. Casey Hutchinson was inspired by a love of unique diner’s, café’s and neighborhood joints that serve unique and high quality breakfast & lunch. Today the inspiration for Sunshine Café continues to be a labor of creativity, freshness, and friendly efficient service
