Butter toffee aroma, flavors of fresh apricot, raw almond, mild semisweet cocoa. Soft, full body and mild acidity. Finca el Triunfo is a farm in the municipality of Pitalito in Huila. Luz Angelica Hoyos grows Caturra and Colombia varieties on a 4 hectare (just shy of 10 acres) at 1680 MASL. The people in this area of Colombia have a strong attachment to their land and, as a point of pride and duty, employ best environmental practices in their coffee production. The farm boasts a high level of biodiversity to provide shade for the coffee trees and further helps maintain a healthy ecosystem. Hoyos harvests her coffee trees every three weeks to be sure cherries are harvested only at the peak of ripeness.
Ethiopia Sidama - Blueberry, Lemon, Mild Black Tea

Mild acidity with a silky body. Reminiscent of blueberry pound cake with lemon poppy seed glaze and a cup of mild black tea. The Sidama region of Ethiopia is located on southern border with Kenya. This selection is a regional offering purchased through the Ethiopian Coffee Exchange (ECX). Producing primarily washed coffees (60%), Sidama has more than 90 individual washing stations. The majority of the coffees brought into this lot are from small land holders who have less than half a hectare of land. While we strive to purchase coffees with high levels of transparency, the culture and structure of coffee production in Ethiopia can be filled with frustration for small producers trying to get their coffee to market. In these instances, the ECX can be beneficial in providing a market for micro-producers relying on small coffee sales.
Honey- and molasses-sweet, complex with notes of cinnamon, clove, and coconut. Granny Smith acidity, light body with long finish. The coffees Luis Lovo have been growing for fifty years in the Nueva Segovia department of Nicaragua have won multiple Cup of Excellence awards, due to the incredible care he exhibits Bella Aurora, the farm started by his father. This lot is 100% Maracaturra, a hybrid of Maragogype and Caturra varieties. The cherry is meticulously selected, then de-pulped and fermented in concrete tanks for eighteen hours. The parchment is dried on the cherry in 100% shade on raised beds to keep the temperature below 35°C. (This protects the embryo of the seed and prolongs the life and quality of the green bean.) After three days the beans are moved to raised beds under 80% shade, where they dry for another 10-14 days. This beautiful coffee, with its signature large beans, is spectacular in any brewing method, and highly recommended as a cappuccino or latte. Like drinking a cup of pecan-praline ice cream!

Full body. Cashew butter, caramel, malted milk. This special lot of coffee comes from both Pinhal and Santo Antônio Farms in the south of the state of Minas Gerais. Exceptionally sweet and soft in the cup, this lot is composed of a handful of heirloom coffee varietals, each derived from the Bourbon strain, each contributing to its delightful flavor. Going back more than five generations, this producer group has been growing excellent coffee and pioneering conservation on their estates for more than a century. The producers have their Rainforest Certification and are committed to the well being of the land under their care and to their employees.

Full Body, Medium Acidity. Red Delicicous apple, graham cracker, nutmeg. Jesus Humberto Mata grows this Caturra variety on his farm in Barrio Las Cruzitas. The entire life of the coffee, from growth to picking of ripe cherries, depulping and washing and drying on raised solar beds, takes place on the farm. Only 75 to 90 bags of this coffee are produced annually. Ristretto Roasters is pleased to have purchased half of this microlot, and to feature a coffee with the hallmarks of great Central American coffees: juicy, high acidity, balanced mouthfeel, a bit of spice. 12 oz./whole bean
