Nakazima-san had taken 4-year formal training at the Culinary Institute of Tokyo Busashi School prior to becoming a certified chef with a Tokyo food service license. He won an award in Tokyo cooking contest in 1988.
From 1988 - 1991, he was a chef at Restaurant Suntory and Edo, two of the most popular restaurants in Tokyo. From 1991-1993, he was an assistant manager at Restaurant Suntory in Taipei. From 1993-1998, he was a partner and chef at Toznkan Restaurant in Tokyo. After that, he came to the states and served at several restaurants in Maryland.
With more than 20-year experience in Kaiseki Nakazima-san can satisfy customers' demand.
