Louisiana Crawfish Time’s roots began back in 1995, while still in my senior year at USL. I Co-founded one of Lafayette's first drive drive thru crawfish establishments. Five years later I sold my share in that first venture and opened Louisiana Crawfish Time.
The timing was horrible; 2000 was the worst crawfish season in history. However, I knew that our crawfish were unmatched in taste and quality. I was confident that if the restaurant could make it through this very difficult year it would be a huge success. Many years of hard work and a commitment to serving quality products have made us one of Acadiana's favorite boil houses.
