Authentic Mexican cuisine is a style of food that originates in Mexico. It is known
for its varied flavors, colorful presentation, and variety of spices and ingredients, many of which are
native to the country. The cuisine of Mexico has evolved through the centuries through a blending of
indigenous and
European (French, Spanish, German, Greek, etc.) elements since the 16th century. In November 2010
Mexico cuisine was added by UNESCO (United Nations Educational and Cultural Organization) to its
lists of the world’s “intangible cultural heritage.”
In the book - Una Mirada Historica a travês de la Comida - A look at History Through Food - it points
out that while eating is a biological act, cooking is a cultural, social and economic act. Cuisine permits
us to identify the group from which an individual comes. The culinary styles of the authentic Mexican
cuisine permits us to identify the group from which an individual comes. The culinary styles of the
authentic Mexican cuisine are “divided so markedly between those of the elite and those of the poor.”
