Aaron Teitelbaum, Executive Chef, Co-Owner After spending seven years training in New York City, co-owner Aaron Teitelbaum returned home to pioneer a new style of dining for St. Louis. While in New York, he spent four years with the Culinary Institute earning his Associates in Culinary Arts and a Bachelors Degree in Restaurant Management. Aaron also spent four years working with restaurateurs such as Bobby Flay at Mesa Grill and Daniel Boulud at Restaurant Daniel. Now after the successful opening and operation of MONARCH Restaurant & Wine Bar, Aaron has taken over the kitchen and management at Herbie's and assembled a stellar team.
