Owner / Chef Joe Fabrocini comes from a long line of restaurants and experience beginning with an apprenticeship at Matteo's Italian Restaurant in Honolulu at the age of 18 going on to work under his Father at the original Fab's Italian Kitchen in Tarzana, CA. Later, Joe opened his own place on Ventura Blvd. called Fabrocini's Italian Kitchen in 1992 with his Brother Vinnie who now owns Fabrocini's Beverly Glen in Bel Air. Later, after taking a break from the restaurant business, Joe got the idea for his hot dog restaurant while working for Guitar Center as Director of Real Estate, traveling around the country sampling different dogs in different regions and decided to bring them together in one place. Remembering his favorites while growing up in New Jersey, he brought The Ripper to LA, a dog made especially for deep frying and only available in northern New Jersey until now. He also loved the dogs you get in Manhattan, those snappy all-beef dogs with red onion sauce and sauerkraut. Joe uses only the finest east-coast dogs and artisan made sausages in his restaurant along with homemade toppings and sauces. So when you visit Fab Hot Dogs, always ask "what's new" and you might just get something interesting that you won't find on the menu.
