Albert and Blanca Vasquez have always loved good, home-style Mexican food. But because Mexican cuisine is prepared with lard, an animal product, it was hard to find restaurants where Blanca, a vegetarian, could eat. So in 1989, Albert and Blanca opened their own restaurant: El Saguarito!
They modified family recipes, replacing the traditional lard with Canola oil and a balance of herbs and spices. Even their homemade tortillas are made without lard-yet none of the flavor is lost.
