Bistro 222 is a realization of a dream for Chef Michael Chamas. For 25 years, Michael has worked with many of the top chefs in the country. Over the years he has crystallized his vision for what the perfect restaurant should be. For Michael, the perfect restaurant was one that was intimate, classy and above all served simple yet innovative cuisine at affordable prices. Michael’s mother has been his greatest teacher and instilled in him his passion for food. "A key to great cooking" she would say "is to use fresh herbs." Another key she would tell him, "is to pay attention to small details;" details that other chef often fail to notice. For instance, don’t over salt and when making a salad, use a good mixer to get just the right amount of dressing on the greens, otherwise it will all collect at the bottom of the plate. Above all, use the freshest ingredients available. As Michael often says, "in cooking, simplicity is a sign of perfection."
